Description

Juicy smash burgers topped with deeply caramelized onions, melted cheddar cheese, and a creamy garlic herb sauce, served on soft buns.

Ingredients

  • 2 medium sweet onions thinly sliced
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon high heat cooking oil
  • 1 tablespoon unsalted butter
  • 4 slices sharp cheddar cheese
  • 4 brioche burger buns
  • 4 leaves green lettuce
  • 1/2 cup mayonnaise
  • 2 tablespoons finely chopped fresh basil
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh rosemary
  • 2 garlic cloves minced
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium low heat. Add butter and let it melt. Add sliced onions and salt, then stir to coat. Cook for 25 to 30 minutes, stirring often, until onions are soft and deeply golden brown. Set aside.
  2. Divide ground beef into 4 equal portions and gently form into loose balls. Do not overwork the meat.
  3. Heat a cast iron skillet or griddle over medium high heat for at least 5 minutes until very hot.
  4. Add oil and half of the butter to the skillet. Place beef balls onto the hot surface and immediately press down firmly with a spatula to create thin patties. Season with salt and pepper.
  5. Cook for 2 to 3 minutes until edges are crispy, then flip. Cook another 2 minutes. Add cheese slices and cook for about 1 minute until melted.
  6. In a small bowl, mix together mayonnaise, basil, parsley, rosemary, garlic, and black pepper until smooth.
  7. Lightly toast the buns if desired. Spread garlic herb sauce on both sides of the buns. Add lettuce, burger patties, and a generous scoop of caramelized onions.
  8. Serve immediately while hot.

Notes

  • Avoid pressing the burgers after flipping for best texture.
  • Cook ground beef to an internal temperature of 160°F for safe consumption.
  • Caramelized onions can be made ahead and stored in the refrigerator for up to 4 days.
