Ingredients
- 2 medium yellow onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 4 slices sourdough bread
- 4 ounces shredded low-moisture mozzarella cheese
- 2 ounces shredded sharp cheddar cheese
- 2 tablespoons softened unsalted butter
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and salt. Cook for 20 minutes, stirring often, until deep golden and very soft.
- Stir in black pepper and remove onions from the skillet.
- Spread softened butter evenly on one side of each bread slice.
- Place two bread slices butter side down in the skillet over medium-low heat.
- Sprinkle mozzarella and cheddar evenly over the bread.
- Spoon caramelized onions over the cheese, dividing evenly.
- Top with remaining bread slices, butter side up.
- Cook for 3 to 4 minutes per side, pressing gently, until bread is golden and cheese is fully melted.
- Transfer to a cutting board, rest 1 minute, then slice and serve hot.

- This recipe uses sourdough bread for the best texture.
