Ingredients
- Crust: 1 1/4 cups all-purpose flour

Instructions
- Prepare the crust. Combine flour and salt in a bowl. Cut in butter until crumbly. Add water one tablespoon at a time until dough comes together. Form into a disk, wrap, and refrigerate 30 minutes.
- Caramelize the onions. Heat olive oil in a wide skillet over medium heat. Add onions and salt. Cook 10 minutes until softened. Reduce heat to medium low and cook 30 to 40 minutes, stirring every few minutes, until deep golden and jammy.
- Preheat oven to 375°F.
- Roll out the dough on a floured surface into a 12-inch circle. Transfer to a 9-inch tart pan and press into the edges. Trim excess.
- Blind bake the crust for 15 minutes until lightly set.
- Whisk eggs, cream, black pepper, and thyme in a bowl until smooth.
- Spread caramelized onions evenly over the crust. Crumble goat cheese on top.
- Pour egg mixture evenly over the filling.
- Bake 30 to 35 minutes until the center is just set and lightly golden.
- Cool 10 minutes before slicing and serving.
