Description

Easy Caramel Cookie Bars are a delicious treat perfect for any occasion. This recipe is simple enough for beginners and results in a chewy cookie base topped with gooey caramel and a hint of peanut butter.

Ingredients

  • For the Bars:
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • ¾ cup sugar
  • ¾ cup packed brown sugar
  • 2 eggs, room temperature
  • 2 cups semi-sweet chocolate chips
  • For the Caramel Sauce:
  • 5 ounces evaporated milk
  • 1 bag (14 oz) caramels
  • ½ cup peanut butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9 x 13 inch pan.
  2. In a small bowl, combine flour, baking soda, and salt.
  3. In a large mixing bowl, beat butter, sugar, and brown sugar until creamy.
  4. Add eggs one at a time, beating well after each.
  5. Gradually mix in the flour mixture.
  6. Fold in the chocolate chips.
  7. Spread half of the cookie dough mixture into the prepared pan.
  8. Bake for 8-10 minutes until lightly golden.
  9. While the dough bakes, melt caramels and evaporated milk in a double boiler.
  10. Stir in peanut butter until smooth and thoroughly melted.
  11. Spread the caramel mixture over the baked cookie dough base.
  12. Drop spoonfuls of the remaining cookie dough over the caramel.
  13. Bake for another 15-20 minutes, or until the top is light golden brown.
  14. Let cool completely before serving.

Notes

  • Ensure your butter is softened for the best cookie dough texture.
  • Room temperature eggs incorporate better into the dough.
  • Melting caramels slowly prevents scorching.
  • Allow the bars to cool completely for clean slicing.
