Description

These calico beans are hearty, saucy, and packed with ground beef and three kinds of beans. A comforting dish perfect for gatherings or dinner.


Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion diced
  • 1 tablespoon olive oil
  • 1 can kidney beans 15 ounces rinsed and drained
  • 1 can lima beans 15 ounces drained
  • 1 can baked beans 28 ounces with sauce
  • 1 2 cup brown sugar packed
  • 1 2 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt
  • 1 2 teaspoon black pepper


Instructions

  1. Preheat the oven to 300°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and onion and cook for 8 to 10 minutes, breaking up the meat, until fully browned and no pink remains.
  3. Drain excess fat from the skillet and set the beef mixture aside.
  4. In a large oven-safe casserole dish, add the kidney beans, lima beans, and baked beans with their sauce.
  5. Add the cooked beef mixture to the beans and stir gently to combine.
  6. In a bowl, whisk together the brown sugar, ketchup, vinegar, mustard, salt, and black pepper.
  7. Pour the sauce over the bean mixture and stir until evenly coated.
  8. Cover the dish tightly with foil and bake for 45 minutes until hot and bubbling around the edges.
  9. Remove from the oven and let rest for 5 minutes before serving.
