Description

This cajun potato soup is rich, creamy, and full of bold spice with potatoes, vegetables, and sausage. It is an easy one-pot meal.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound beef smoked sausage sliced into ¼ inch rounds
  • 1 large yellow onion diced
  • ½ cup diced celery
  • ½ red bell pepper diced
  • 2 teaspoons minced garlic
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes peeled and cubed
  • ½ cup heavy cream
  • 1 cup mild cheddar cheese shredded
  • 2 tablespoons fresh parsley chopped


Instructions

  1. Heat the oil in a large pot over medium heat. Add the sliced sausage and cook for 4 to 5 minutes until lightly browned. Remove and set aside.
  2. In the same pot, add the onion, celery, and bell pepper. Cook for 6 to 8 minutes until softened. Stir in the garlic and cook 1 minute more.
  3. Sprinkle in the Cajun seasoning, salt, black pepper, paprika, and cayenne pepper, stirring to coat the vegetables evenly.
  4. Pour in the chicken broth and add the cubed potatoes. Bring to a gentle boil, then reduce heat and simmer for 25 minutes until potatoes are fork tender.
  5. Return the sausage to the pot and stir in the heavy cream and shredded cheese. Simmer 5 minutes until the cheese is melted and the soup is creamy.
  6. Remove from heat and garnish with chopped parsley before serving.

Notes

  • For a thicker soup, lightly mash some of the potatoes in the pot before adding the cream.
