Cajun Butter Chicken and Rice Crockpot

Description

A rich, comforting slow cooker meal with tender chicken and seasoned rice, perfect for busy days.


Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 tablespoon cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long grain white rice, rinsed
  • 2 cups low sodium chicken broth
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 2 tablespoons chopped parsley


Instructions

  1. Lightly grease the inside of the crockpot. Place diced bell peppers and onion evenly on the bottom.
  2. Season the chicken thighs with cajun seasoning, salt, and black pepper, then place on top of the vegetables.
  3. In a small bowl mix melted butter, garlic, paprika, thyme, and onion powder. Pour this mixture evenly over the chicken.
  4. Cover and cook on low for 3 to 4 hours or until the chicken is tender.
  5. Remove the chicken and set aside. Stir the rinsed rice and chicken broth into the crockpot liquid.
  6. Return the chicken on top of the rice, cover, and cook on high for 1 1/2 to 2 hours until the rice is tender and has absorbed the liquid.
  7. Fluff the rice gently and spoon the buttery sauce over the chicken.
  8. Garnish with chopped parsley before serving.
  9. Ensure the chicken reaches an internal temperature of 165 degrees F before serving.

Notes

  • For extra flavor, add a squeeze of fresh lemon juice before serving to balance the richness.
