Description
Simple, comforting butter rice with eggs, quick to make and budget friendly. Great for breakfast, lunch, or a fast dinner.
Ingredients
- 1 cup long grain white rice
- 2 cups water
- 1 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 4 large eggs
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Rinse the rice under cold water until the water runs mostly clear.
- Combine rice, water, and salt in a medium saucepan and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender.
- Remove from heat and stir in the butter until melted and fluffy.
- Heat olive oil in a skillet over medium heat.
- Crack eggs into the skillet and cook until whites are set and yolks are cooked to your preference.
- Spoon rice into bowls and top each portion with a cooked egg.
- Finish with black pepper and serve warm.
