Description

Simple, comforting butter rice with eggs, quick to make and budget friendly. Great for breakfast, lunch, or a fast dinner.


Ingredients

  • 1 cup long grain white rice
  • 2 cups water
  • 1 teaspoon kosher salt
  • 2 tablespoons unsalted butter
  • 4 large eggs
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Rinse the rice under cold water until the water runs mostly clear.
  2. Combine rice, water, and salt in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender.
  4. Remove from heat and stir in the butter until melted and fluffy.
  5. Heat olive oil in a skillet over medium heat.
  6. Crack eggs into the skillet and cook until whites are set and yolks are cooked to your preference.
  7. Spoon rice into bowls and top each portion with a cooked egg.
  8. Finish with black pepper and serve warm.
