Description
A creamy and flavorful slow cooker Buffalo Ranch Chicken Penne dish with a perfect kick, ideal for busy weeknights.
Ingredients
- 1 lb chicken breast
- 1 medium onion, chopped
- 1 (16 oz) box penne pasta
- 1 jar (about 15 oz) Alfredo sauce
- 1/3 to 1/2 cup buffalo wing sauce
- 1 tbsp dry ranch seasoning
- 2 tbsp bottled ranch dressing (optional)
- 1 cup shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
Instructions
- Place chicken breast and chopped onion in slow cooker. Sprinkle with ranch seasoning, salt, pepper, paprika, garlic powder, and Italian seasoning. Pour in half of the buffalo wing sauce. Cover and cook on high for 3–4 hours until chicken is tender.
- About 20 minutes before chicken is done, cook penne pasta according to package directions.
- Shred cooked chicken in the slow cooker. Stir in Alfredo sauce, remaining buffalo sauce, ranch dressing (if using), Parmesan cheese, and half of the mozzarella until creamy.
- Add drained pasta to the slow cooker and toss. Sprinkle remaining mozzarella over the top, cover for a few minutes to melt, and serve hot.
Notes
- The ranch dressing is optional but adds extra creaminess.
- Adjust the amount of buffalo wing sauce to your spice preference.
