This creamy buffalo chicken pasta is a one-pot dinner loaded with tender chicken, melted cheese, and a tangy buffalo sauce. Easy, cozy, and ready in 30 minutes.
Ingredients
- 1 pound boneless skinless chicken breast, cut into bite-size pieces
- 2 tablespoons olive oil
- ½ cup diced yellow onion
- ½ cup diced celery
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 3½ cups low-sodium chicken broth
- 12 ounces penne or rotini pasta
- ½ cup buffalo sauce (mild or medium)
- 4 ounces cream cheese, softened and cubed
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup ranch dressing
- ¼ teaspoon smoked paprika (optional)
- Chopped green onions or parsley (for serving)
- Extra shredded cheese or a drizzle of ranch (for serving)
Instructions
- Heat olive oil in a large deep skillet over medium heat. Add chicken and cook 5 to 6 minutes until golden and cooked through to 165°F. Remove and set aside.
- In the same skillet, add onion and celery. Cook 4 minutes until softened. Add garlic and cook 30 seconds more.
- Stir in diced tomatoes and chicken broth. Bring to a boil. Add pasta and reduce heat to medium. Cook uncovered, stirring occasionally, until pasta is al dente, about 10 minutes.
- Lower heat to low. Add buffalo sauce and cream cheese, stirring until melted and smooth.
- Stir in cheddar, mozzarella, and ranch dressing until sauce becomes creamy and glossy.
- Return chicken to the skillet and toss to coat. Simmer 2 minutes for flavors to combine.
- Serve warm topped with parsley, extra cheese, or a drizzle of ranch.
