Description

These buckeye brownie cookies are rich, fudgy, and filled with creamy peanut butter, finished with a smooth chocolate topping. This recipe yields bakery-style cookies perfect for chocolate and peanut butter fans.


Ingredients

  • 1 family size fudge brownie mix dry mix only
  • ¼ cup unsalted butter melted
  • 4 ounces cream cheese softened
  • 1 large egg
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 4 ounces dark or semi sweet chocolate chopped


Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, mix the brownie mix, melted butter, softened cream cheese, and egg until a thick dough forms.
  3. Scoop the dough into 24 equal portions and roll into smooth balls. Place them 2 inches apart on the prepared baking sheets.
  4. Bake for 11 to 13 minutes until the cookies are just set but still soft in the center.
  5. While the cookies bake, mix the peanut butter and powdered sugar until smooth. Roll this mixture into 24 small balls, about 1 inch each.
  6. Remove the cookies from the oven. Gently press one peanut butter ball into the center of each cookie immediately.
  7. Transfer the cookies to a wire rack and cool completely.
  8. Melt the chocolate in a microwave safe bowl in 20 second intervals, stirring until smooth.
  9. Spoon about ½ tablespoon of melted chocolate over the peanut butter center of each cookie. Let the chocolate set before serving.
