These buckeye brownie cookies are rich, fudgy, and filled with creamy peanut butter, finished with a smooth chocolate topping. This recipe yields bakery-style cookies perfect for chocolate and peanut butter fans.
Ingredients
- 1 family size fudge brownie mix dry mix only
- ¼ cup unsalted butter melted
- 4 ounces cream cheese softened
- 1 large egg
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 4 ounces dark or semi sweet chocolate chopped
Instructions
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a large bowl, mix the brownie mix, melted butter, softened cream cheese, and egg until a thick dough forms.
- Scoop the dough into 24 equal portions and roll into smooth balls. Place them 2 inches apart on the prepared baking sheets.
- Bake for 11 to 13 minutes until the cookies are just set but still soft in the center.
- While the cookies bake, mix the peanut butter and powdered sugar until smooth. Roll this mixture into 24 small balls, about 1 inch each.
- Remove the cookies from the oven. Gently press one peanut butter ball into the center of each cookie immediately.
- Transfer the cookies to a wire rack and cool completely.
- Melt the chocolate in a microwave safe bowl in 20 second intervals, stirring until smooth.
- Spoon about ½ tablespoon of melted chocolate over the peanut butter center of each cookie. Let the chocolate set before serving.
Notes
- Do not overbake the cookies or they will lose their soft brownie texture.
