Juicy, cheesy chicken breasts filled with tomatoes, basil, and feta for an easy and flavorful dinner.
Ingredients
- 4 boneless skinless chicken breasts, about 6 ounces each
- 1 tablespoon paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 3 tablespoons olive oil
- 1 cup chopped cherry tomatoes
- 1/2 cup chopped green onions
- 2 tablespoons finely chopped red onion
- 1/2 cup chopped dried cranberries
- 1 cup crumbled feta cheese
- 3 tablespoons chopped fresh basil
- 1 teaspoon dried basil
- 1 teaspoon black pepper
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 2 teaspoons balsamic vinegar
- 1 tablespoon balsamic glaze
Instructions
- Preheat your oven to 400 degrees F.
- In a medium bowl, combine the cherry tomatoes, green onions, red onion, dried cranberries, feta cheese, fresh basil, dried basil, black pepper, lemon juice, salt, balsamic vinegar, and balsamic glaze. Mix well and set aside.
- Slice each chicken breast horizontally to create a pocket without cutting all the way through.
- In a small bowl, mix the paprika, black pepper, salt, onion powder, and garlic powder.
- Rub the chicken breasts with 2 tablespoons olive oil and season both sides evenly with the spice mixture.
- Stuff each chicken breast with the bruschetta filling and secure with toothpicks if needed.
- Heat the remaining 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 5 to 6 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 18 to 20 minutes until the chicken reaches an internal temperature of 165 degrees F.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
- Spoon any extra bruschetta filling from the skillet over the chicken before serving.
Notes
- Do not overfill the chicken breasts so the filling stays securely inside while cooking.
