Description
A fresh and zesty cold pasta salad with tomatoes, basil, and a light dressing, perfect for summer gatherings.
Ingredients
- 12 ounces rotini pasta
- 1 tablespoon salt for pasta water
- 2 cups cherry tomatoes diced
- 1 quarter cup red onion finely chopped
- 3 tablespoons fresh basil chopped
- 2 cloves garlic minced
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 half teaspoon salt
- 1 quarter teaspoon black pepper
Instructions
- Bring a large pot of water to a boil and add salt. Cook the pasta according to package directions until al dente.
- Drain the pasta and rinse under cold water to cool completely.
- In a large bowl, combine diced tomatoes, red onion, basil, and minced garlic.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
- Add the cooled pasta to the bowl with the tomato mixture.
- Pour the dressing over the pasta and toss gently until everything is well coated.
- Let the salad sit for 10 minutes to allow the flavors to blend.
- Taste and adjust seasoning if needed.
- Serve chilled or at room temperature.
