Description

A fresh and zesty cold pasta salad with tomatoes, basil, and a light dressing, perfect for summer gatherings.


Ingredients

  • 12 ounces rotini pasta
  • 1 tablespoon salt for pasta water
  • 2 cups cherry tomatoes diced
  • 1 quarter cup red onion finely chopped
  • 3 tablespoons fresh basil chopped
  • 2 cloves garlic minced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 half teaspoon salt
  • 1 quarter teaspoon black pepper


Instructions

  1. Bring a large pot of water to a boil and add salt. Cook the pasta according to package directions until al dente.
  2. Drain the pasta and rinse under cold water to cool completely.
  3. In a large bowl, combine diced tomatoes, red onion, basil, and minced garlic.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
  5. Add the cooled pasta to the bowl with the tomato mixture.
  6. Pour the dressing over the pasta and toss gently until everything is well coated.
  7. Let the salad sit for 10 minutes to allow the flavors to blend.
  8. Taste and adjust seasoning if needed.
  9. Serve chilled or at room temperature.
