Ingredients
- For the tomato mixture: 2 cups diced ripe Roma tomatoes
- 1 teaspoon salt
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 2 cloves garlic finely minced
- 1 tablespoon finely chopped fresh basil
- 1 teaspoon dried oregano
- 1 half teaspoon black pepper
- For the cheese layer: 8 ounces fresh mozzarella pearls drained and halved
- 1 tablespoon extra virgin olive oil
- 1 tablespoon chopped fresh basil
- For serving: 1 baguette sliced into half inch pieces
- 2 tablespoons extra virgin olive oil
Instructions
- Place diced tomatoes in a bowl and sprinkle with salt. Let sit for 10 minutes to release excess juices, then gently drain off liquid.
- Add olive oil, balsamic vinegar, garlic, basil, oregano, and black pepper to the tomatoes. Stir well and set aside to marinate for 10 minutes.
- In a separate bowl, combine mozzarella pearls with olive oil and chopped basil. Toss gently to coat.
- Preheat oven to 400 degrees Fahrenheit. Arrange baguette slices on a baking sheet and brush lightly with olive oil.
- Toast bread for 8 to 10 minutes until edges are golden and crisp. Remove and let cool slightly.
- Spread the mozzarella mixture evenly onto a shallow serving dish.
- Spoon the tomato mixture over the cheese layer, distributing evenly.
- Serve immediately with toasted baguette slices for scooping.
