Description

Ingredients

  • For the tomato mixture: 2 cups diced ripe Roma tomatoes
  • 1 teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic finely minced
  • 1 tablespoon finely chopped fresh basil
  • 1 teaspoon dried oregano
  • 1 half teaspoon black pepper
  • For the cheese layer: 8 ounces fresh mozzarella pearls drained and halved
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chopped fresh basil
  • For serving: 1 baguette sliced into half inch pieces
  • 2 tablespoons extra virgin olive oil


Instructions

  1. Place diced tomatoes in a bowl and sprinkle with salt. Let sit for 10 minutes to release excess juices, then gently drain off liquid.
  2. Add olive oil, balsamic vinegar, garlic, basil, oregano, and black pepper to the tomatoes. Stir well and set aside to marinate for 10 minutes.
  3. In a separate bowl, combine mozzarella pearls with olive oil and chopped basil. Toss gently to coat.
  4. Preheat oven to 400 degrees Fahrenheit. Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  5. Toast bread for 8 to 10 minutes until edges are golden and crisp. Remove and let cool slightly.
  6. Spread the mozzarella mixture evenly onto a shallow serving dish.
  7. Spoon the tomato mixture over the cheese layer, distributing evenly.
  8. Serve immediately with toasted baguette slices for scooping.
