Ingredients

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream softened butter with brown sugar and granulated sugar until light and fluffy (2-3 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet ingredients and mix until just combined.
- In a small bowl, mix brown sugar and cinnamon for the filling; set aside.
- Divide dough into two equal portions. Roll one portion out on a floured surface about 1/4 inch thick and cut into rectangles (3×4 inches). Repeat with the second portion.
- Place one rectangle on a parchment-lined baking sheet, put a tablespoon of filling in the center, then cover with another rectangle and seal the edges. Repeat for all cookies.
- Bake for 12-15 minutes or until lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Mix powdered sugar with 1-2 tablespoons milk until smooth and drizzle over cooled cookies. Add sprinkles if desired.
