Description

Juicy broccoli cheese stuffed chicken breast baked until tender with a creamy filling that makes an easy high protein family dinner. This dish looks good and tastes indulgent but is simple for weeknights.


Ingredients

  • 4 boneless skinless chicken breasts about 8 ounces each and 1 ½ inches thick
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • 3 tablespoons olive oil
  • 2 cups finely chopped broccoli florets
  • ¾ cup shredded sharp cheddar cheese
  • 4 ounces cream cheese softened
  • 1 clove garlic minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper


Instructions

  1. Preheat oven to 375°F.
  2. Pat chicken breasts dry and season all sides with salt, black pepper, garlic powder, onion powder, and paprika.
  3. In a bowl, mix broccoli, cheddar cheese, cream cheese, garlic, salt, and black pepper until fully combined.
  4. Cut a deep pocket into the side of each chicken breast, being careful not to cut through the other side.
  5. Divide the filling evenly and stuff into each chicken breast, pressing gently to seal.
  6. Heat olive oil in a large oven safe skillet over medium high heat.
  7. Sear stuffed chicken for 2 to 3 minutes per side until lightly golden.
  8. Transfer skillet to the oven and bake for 22 to 26 minutes until chicken is cooked through.
  9. Remove from oven and rest for 5 minutes before serving. Chicken is done when the thickest part reaches an internal temperature of 165°F.
