Description
Juicy broccoli cheese stuffed chicken breast baked until tender with a creamy filling that makes an easy high protein family dinner. This dish looks good and tastes indulgent but is simple for weeknights.
Ingredients
- 4 boneless skinless chicken breasts about 8 ounces each and 1 ½ inches thick
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon paprika
- 3 tablespoons olive oil
- 2 cups finely chopped broccoli florets
- ¾ cup shredded sharp cheddar cheese
- 4 ounces cream cheese softened
- 1 clove garlic minced
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- Pat chicken breasts dry and season all sides with salt, black pepper, garlic powder, onion powder, and paprika.
- In a bowl, mix broccoli, cheddar cheese, cream cheese, garlic, salt, and black pepper until fully combined.
- Cut a deep pocket into the side of each chicken breast, being careful not to cut through the other side.
- Divide the filling evenly and stuff into each chicken breast, pressing gently to seal.
- Heat olive oil in a large oven safe skillet over medium high heat.
- Sear stuffed chicken for 2 to 3 minutes per side until lightly golden.
- Transfer skillet to the oven and bake for 22 to 26 minutes until chicken is cooked through.
- Remove from oven and rest for 5 minutes before serving. Chicken is done when the thickest part reaches an internal temperature of 165°F.
