Description
Crispy blueberry grilled cheese with sharp cheddar and mozzarella. A sweet and savory sandwich perfect for brunch or lunch.
Ingredients
- 1 pint fresh blueberries
- 1 quarter cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme leaves
- 8 slices sourdough bread about one quarter inch thick
- 4 ounces sharp white cheddar cheese freshly shredded
- 4 ounces whole milk mozzarella freshly shredded
- 4 tablespoons unsalted butter softened
- 1 pinch flaky salt
Instructions
- In a small saucepan over medium heat, combine blueberries, sugar, and lemon juice. Cook for 8 to 10 minutes, stirring occasionally, until the berries burst and the mixture thickens to a jam like consistency. Stir in fresh thyme and remove from heat. Let cool for at least 10 minutes so it thickens further.
- Lay out four slices of bread. Spread about 2 tablespoons of the cooled blueberry mixture evenly over each slice.
- Divide the shredded cheddar and mozzarella evenly over the blueberry layer. Top with the remaining slices of bread to form four sandwiches.
- Spread softened butter evenly over the outside of each sandwich on both top and bottom slices.
- Heat a large skillet over medium low heat. Place two sandwiches in the skillet and cook for 3 to 4 minutes per side until the bread is golden brown and the cheese is fully melted. Adjust heat as needed to prevent burning while allowing the cheese to melt. Repeat with remaining sandwiches.
- Transfer to a cutting board and let rest for 2 minutes. Slice in half and sprinkle lightly with flaky salt before serving.
