Description

Blueberry French toast casserole with creamy pockets and warm spices. A make ahead breakfast perfect for brunch and special mornings. Cubes of bread soak in a rich custard, layered with sweet blueberries and creamy filling, then baked until golden and tender.


Ingredients

  • 12 cups day old French bread cut into 1 inch cubes
  • 1 tablespoon unsalted butter softened for greasing dish
  • 8 ounces cream cheese softened
  • 1 half cup powdered sugar
  • 2 tablespoons milk
  • 1 cup fresh blueberries
  • 8 large eggs
  • 2 cups whole milk
  • 1 half cup heavy cream
  • 1 third cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 quarter teaspoon ground nutmeg
  • 1 cup fresh blueberries


Instructions

  1. Grease a 9 by 13 inch baking dish with softened butter. Spread half of the bread cubes evenly in the bottom of the dish.
  2. In a bowl, beat the cream cheese, powdered sugar, and milk until smooth. Gently fold in 1 cup blueberries. Spoon the mixture evenly over the bread layer.
  3. Top with the remaining bread cubes, spreading them evenly over the cream cheese layer.
  4. In a large bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, cinnamon, and nutmeg until fully combined.
  5. Slowly pour the custard mixture evenly over the bread layers, pressing down gently so all pieces absorb the liquid. Sprinkle the remaining 1 cup blueberries over the top.
  6. Cover tightly and refrigerate for at least 8 hours or overnight to allow the bread to fully soak.
  7. Remove the casserole from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees Fahrenheit.
  8. Bake covered with foil for 40 minutes. Remove the foil and bake an additional 25 to 30 minutes until the center is set and a knife inserted in the middle comes out clean. The top should be lightly golden.
  9. Let rest for 10 minutes before slicing and serving.

  • For best texture, use slightly stale bread so it absorbs the custard without becoming overly soft.
