Easy homemade blueberry cupcakes with fresh berries and vanilla frosting.
Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk
- 1 1/4 cups fresh blueberries
- 1 tablespoon all purpose flour
- 1/2 cup unsalted butter softened
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Line a 12 cup muffin pan with cupcake liners.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Beat butter and sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Add dry ingredients and milk alternately, mixing until just combined.
- Toss blueberries with 1 tablespoon flour, then fold into batter.
- Divide batter evenly among cupcake liners.
- Bake for 18 to 22 minutes until tops spring back and a toothpick comes out clean.
- Cool cupcakes completely before frosting.
- Beat butter until smooth for frosting. Gradually add powdered sugar, milk, and vanilla extract until creamy and fluffy.
- Frost cooled cupcakes and serve.

- Tossing blueberries in flour helps prevent them from sinking.
