Ingredients
- For the Bread:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk (or buttermilk)
- 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
- For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and milk, mixing just until combined. Fold in floured blueberries.
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Pour half the batter into the loaf pan. Spread the cream cheese layer evenly. Top with remaining batter and spread carefully.
- Bake for 55–65 minutes, or until a toothpick comes out clean. Tent with foil if browning too quickly.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
