A soft, lightly sweet, high-protein breakfast bake resembling cheesecake. This is an easy make-ahead option.
Ingredients
- 1.5 cup cottage cheese
- 3 large eggs
- 0.33 cup maple syrup
- 1 teaspoon vanilla extract
- 0.5 cup oat flour
- 1 teaspoon baking powder
- 0.5 teaspoon cinnamon
- 0.25 teaspoon salt
- 1 cup blueberries plus extra for topping
Instructions
- Preheat your oven to 350°F and lightly grease an 8 by 8 baking dish.
- Combine cottage cheese, eggs, maple syrup, vanilla, oat flour, baking powder, cinnamon, and salt in a blender. Blend until completely smooth.
- Pour the mixture into a bowl and gently fold in the blueberries.
- Transfer the batter to the prepared baking dish and sprinkle extra blueberries on top.
- Bake for 35 to 40 minutes until the top is lightly golden and the center is set.
- Let cool slightly before slicing and serving.
