Description

A flavorful blackened salmon recipe topped with a fresh and zesty avocado salsa.

Ingredients

  • 1.5 lbs salmon fillets
  • 2 tbsp blackened seasoning
  • 1 tbsp olive oil
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels.
  3. Season both sides of the salmon with blackened seasoning, salt, and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat.
  5. Sear the salmon for 2-3 minutes per side until browned.
  6. Transfer the skillet to the preheated oven and bake for 8-12 minutes, or until the salmon is cooked through.
  7. While the salmon bakes, prepare the salsa: In a medium bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, and lime juice.
  8. Gently mix the salsa ingredients. Season with salt and pepper to your preference.
  9. Serve the blackened salmon topped with the fresh avocado salsa.

Notes

  • For a spicier salsa, add a minced jalapeño pepper.
  • You can grill the salmon instead of baking it.
  • Adjust the amount of blackened seasoning to your spice preference.
