Ingredients
- 1.5 lbs salmon fillets
- 2 tbsp blackened seasoning
- 1 tbsp olive oil
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the salmon fillets dry with paper towels.
- Season both sides of the salmon with blackened seasoning, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the salmon for 2-3 minutes per side until browned.
- Transfer the skillet to the preheated oven and bake for 8-12 minutes, or until the salmon is cooked through.
- While the salmon bakes, prepare the salsa: In a medium bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, and lime juice.
- Gently mix the salsa ingredients. Season with salt and pepper to your preference.
- Serve the blackened salmon topped with the fresh avocado salsa.
Notes
- For a spicier salsa, add a minced jalapeño pepper.
- You can grill the salmon instead of baking it.
