Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 3 oz cooking oil (about 1/3 cup)
- 2 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1 1/4 cups chocolate chips (divided)
Instructions
- Preheat oven to 350Β°F. Spray an 8Γ4-inch loaf pan with cooking spray.
- In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
- In a large bowl, mix oil, eggs, sugar, vanilla, and pumpkin puree until smooth. Stir in 1 cup chocolate chips.
- Add dry ingredients to wet and mix until fully blended, scraping the sides and bottom of the bowl.
- Pour batter into the loaf pan and smooth the top. Sprinkle remaining 1/4 cup chocolate chips over the top.
- Bake 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then remove to a wire rack to cool completely before slicing.
Notes
