Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder

  • 1/2 tsp ground nutmeg
  • 3 oz cooking oil (about 1/3 cup)
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)


Instructions

  1. Preheat oven to 350Β°F. Spray an 8Γ—4-inch loaf pan with cooking spray.
  2. In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, mix oil, eggs, sugar, vanilla, and pumpkin puree until smooth. Stir in 1 cup chocolate chips.
  4. Add dry ingredients to wet and mix until fully blended, scraping the sides and bottom of the bowl.
  5. Pour batter into the loaf pan and smooth the top. Sprinkle remaining 1/4 cup chocolate chips over the top.
  6. Bake 50-60 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 10 minutes, then remove to a wire rack to cool completely before slicing.
