Description

This simple chicken marinade makes any cut tender, juicy, and full of flavor with lemon, garlic, honey, and herbs. Perfect for grilling or baking.


Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt
  • 1 tablespoon chopped fresh parsley, for garnish
  • Lemon wedges, for serving


Instructions

  1. In a medium bowl or zip-top bag, whisk together olive oil, honey, soy sauce, lemon juice, vinegar, garlic, oregano, pepper, and salt until combined.
  2. Add chicken and turn to coat well. Seal the bag or cover the bowl and refrigerate for at least 30 minutes or up to 8 hours.
  3. Preheat grill, skillet, or oven to medium-high heat.
  4. Remove chicken from marinade, letting excess drip off. Discard the used marinade.
  5. Cook chicken for 4 to 5 minutes per side, or until internal temperature reaches 165°F for breasts and thighs.
  6. Transfer to a plate and rest for 3 minutes before serving.
  7. Garnish with chopped parsley and serve with lemon wedges.
