Description

A fresh and satisfying classic salad featuring grilled chicken, crisp romaine, homemade croutons, and a creamy, tangy dressing.


Ingredients

  • 3 tablespoons olive oil for croutons
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic grated for croutons
  • 1/2 teaspoon salt for croutons
  • 1/4 teaspoon black pepper for croutons
  • 4 cups ciabatta bread cubes
  • 3 tablespoons olive oil for chicken
  • 2 tablespoons fresh lemon juice for marinade
  • 2 teaspoons lemon zest
  • 1 clove garlic grated for marinade
  • 1 teaspoon salt for marinade
  • 1/2 teaspoon black pepper for marinade
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 3 tablespoons grated Parmesan cheese for dressing
  • 1 clove garlic grated for dressing
  • 1 tablespoon lemon juice for dressing
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt for dressing
  • 1/4 teaspoon black pepper for dressing
  • 2 heads romaine lettuce chopped
  • 1/4 cup grated Parmesan cheese for salad topping


Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, mix olive oil, parsley, garlic, salt, and pepper for croutons. Toss bread cubes with the mixture until coated. Spread on a baking sheet and bake for 13 to 15 minutes until crisp and golden. Set aside.
  3. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper for the marinade. Add chicken and coat well. Cover and refrigerate for at least 2 hours.
  4. Preheat a grill or grill pan over medium high heat. Remove chicken from marinade and cook for 4 to 5 minutes per side until internal temperature reaches 165°F. Let rest, then slice into bite sized pieces.
  5. In a bowl, whisk together mayonnaise, buttermilk, Parmesan, garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and pepper until smooth for the dressing.
  6. In a large bowl, combine romaine lettuce, grilled chicken, and croutons.
  7. Drizzle dressing over the salad and toss gently to coat.
  8. Top with additional Parmesan and serve immediately.

  • Chill the dressing for 30 minutes before serving for extra flavor.
  • Store components separately for best texture if making ahead.
