Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (85% lean)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dry mustard powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 can (10.5 ounces) cream of mushroom soup
- ½ cup sour cream
- 4 cups shredded green cabbage
- 1 cup shredded carrots
- 1 cup shredded cheddar cheese
- ½ cup panko breadcrumbs
- 1 tablespoon melted butter
Instructions
- Preheat oven to 375°F. Lightly grease a 2-quart baking dish.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, about 6 minutes, breaking it into crumbles.
- Add onion and garlic and cook 3 minutes until softened. Stir in mustard powder, paprika, salt, and black pepper.
- In a bowl, whisk together the cream of mushroom soup and sour cream. Add the cooked beef mixture, cabbage, and carrots. Stir until well combined.
- Spread the mixture evenly into the prepared baking dish. Sprinkle cheddar cheese over the top.
- In a small bowl, combine panko breadcrumbs with melted butter. Sprinkle over the cheese layer.
- Cover with foil and bake for 25 minutes. Uncover and bake an additional 15 minutes, until the top is golden and bubbly.
- Let the casserole rest for 10 minutes before serving.
