Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a separate mixing bowl, beat the butter and brown sugar together until the mixture is pale and creamy, about 2 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, mashed bananas, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients. Mix on low speed until just combined. If you are using any optional add-ins like nuts or chocolate chips, gently fold them in.
  6. Pour the batter into the prepared loaf pan. Bake for 55 to 65 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.
