Crispy Beef and Cheese Chimichangas

Description

Golden crispy beef and cheese chimichangas filled with seasoned ground beef, beans, and melted cheese. Easy to bake or pan fry for a perfect dinner.


Ingredients

  • 1 pound ground beef
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas
  • 2 tablespoons vegetable oil


Instructions

  1. Cook the ground beef and diced onion in a large skillet over medium heat for 6 to 8 minutes until the meat browns and the onion softens.
  2. Drain excess grease. Stir in garlic, chili powder, cumin, paprika, salt, pepper, and salsa. Cook for 3 to 4 minutes until the mixture thickens slightly and combines well.
  3. Warm the tortillas briefly to make them easy to roll.
  4. Spread about 2 tablespoons of refried beans down the center of each tortilla.
  5. Add a scoop of the beef mixture and sprinkle about ¼ cup of shredded cheese on top.
  6. Fold in the sides and roll tightly into a burrito shape, placing seam side down.
  7. Preheat oven to 400°F (Oven Method) OR Heat vegetable oil in a skillet over medium heat (Skillet Method).
  8. (Oven Method) Lightly brush chimichangas with vegetable oil and place seam side down on a baking sheet.
  9. (Oven Method) Bake for 18 to 20 minutes, flipping halfway through, until golden and crisp.
  10. (Skillet Method) Place chimichangas seam side down and cook for 2 to 3 minutes per side until golden and crispy.
  11. Let rest for 2 minutes before serving.

Notes

  • Serve with sour cream, guacamole, shredded lettuce, or extra salsa.
  • Ground beef must reach an internal temperature of 160°F for safe eating.
