Ingredients
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 1 tbsp cornstarch (for marinade)
- 1 tbsp soy sauce (for marinade)
- 1 tbsp vegetable oil (for marinade)
- 2 packs (3 oz each) instant ramen noodles (discard seasoning packets)
- 3 cups broccoli florets, cut into bite-sized pieces
- 2 tbsp vegetable oil (for cooking)
- 1/2 cup beef broth
- 1/3 cup low-sodium soy sauce
- 1 tbsp brown sugar, packed
- 1 tbsp cornstarch (for sauce)
- 2 tsp sesame oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/4 tsp black pepper
Instructions
- Toss the sliced beef with 1 tbsp soy sauce, 1 tbsp vegetable oil, and 1 tbsp cornstarch. Set aside to marinate for 10 minutes.
- Whisk together beef broth, low-sodium soy sauce, brown sugar, 1 tbsp cornstarch, sesame oil, minced garlic, ginger, and black pepper in a bowl until smooth.
- Bring water to a boil. Cook ramen noodles for 2–3 minutes until just tender. Drain and rinse with cold water.
- Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add broccoli and stir-fry for 3–4 minutes until crisp-tender. Remove the broccoli from the pan.
- Add the remaining 1 tbsp oil to the skillet. Sear the beef in a single layer for 2–3 minutes per side until browned. Cook in batches if necessary.
- Pour the prepared sauce into the skillet with the beef. Simmer for 1–2 minutes until it thickens.
- Toss the cooked noodles and broccoli back into the skillet. Stir gently to coat everything evenly.
- Cook for an additional 1–2 minutes to heat through.
- Serve immediately.
