Description
A quick and hearty one-pan dinner with sweet potatoes, chicken, smoky barbecue sauce, and melted cheddar cheese.
Ingredients
- 2 medium sweet potatoes peeled and diced
- 1 pound boneless skinless chicken fillet cut into bite sized pieces
- 1 cup barbecue sauce
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1 teaspoon smoked paprika
- 1 half teaspoon salt
- 1 quarter teaspoon black pepper
- 2 tablespoons fresh parsley chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for 10 to 12 minutes, stirring occasionally, until they begin to soften and lightly brown.
- Add diced onion and cook for 5 minutes until soft and translucent.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Push the vegetables to one side of the skillet and add the chicken pieces to the empty side.
- Season the chicken with smoked paprika, salt, and black pepper. Cook for 5 to 7 minutes, stirring occasionally, until fully cooked and no longer pink.
- Pour barbecue sauce over the chicken and stir everything together. Let it simmer for 3 to 5 minutes until heated through and slightly thickened.
- Sprinkle shredded cheddar cheese evenly over the skillet. Cover and cook for 2 to 3 minutes until the cheese is fully melted.
- Remove from heat, sprinkle with fresh parsley, and serve warm.

- Cut sweet potatoes into evenly sized pieces so they cook at the same rate and develop a lightly crisp exterior.
