Hearty and flavorful BBQ chicken sweet potato bowls with roasted sweet potatoes, tender BBQ chicken, and fresh toppings. Perfect for meal prep.
Ingredients
- 1.5 pounds boneless skinless chicken breast
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 cup barbecue sauce
- 2 large sweet potatoes peeled and cubed
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup corn kernels
- 1 cup black beans rinsed and drained
- 1 cup cherry tomatoes halved
- 0.5 cup shredded cheddar cheese
- 0.25 cup chopped green onions
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Toss sweet potatoes with olive oil, salt, and black pepper. Spread on the baking sheet and roast for 25 to 30 minutes until tender and lightly browned.
- While sweet potatoes cook, season chicken with salt, black pepper, garlic powder, and paprika.
- Heat olive oil in a skillet over medium high heat and cook chicken for 6 to 8 minutes until browned and cooked through.
- Reduce heat to low and stir in barbecue sauce, coating the chicken evenly. Simmer for 2 to 3 minutes.
- Warm corn and black beans in a small pan or microwave.
- Assemble bowls with roasted sweet potatoes, BBQ chicken, corn, black beans, cherry tomatoes, and cheddar cheese.
- Sprinkle with green onions and serve warm.
