Description

Hearty and flavorful BBQ chicken sweet potato bowls with roasted sweet potatoes, tender BBQ chicken, and fresh toppings. Perfect for meal prep.


Ingredients

  • 1.5 pounds boneless skinless chicken breast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 cup barbecue sauce
  • 2 large sweet potatoes peeled and cubed
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup corn kernels
  • 1 cup black beans rinsed and drained
  • 1 cup cherry tomatoes halved
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup chopped green onions


Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Toss sweet potatoes with olive oil, salt, and black pepper. Spread on the baking sheet and roast for 25 to 30 minutes until tender and lightly browned.
  3. While sweet potatoes cook, season chicken with salt, black pepper, garlic powder, and paprika.
  4. Heat olive oil in a skillet over medium high heat and cook chicken for 6 to 8 minutes until browned and cooked through.
  5. Reduce heat to low and stir in barbecue sauce, coating the chicken evenly. Simmer for 2 to 3 minutes.
  6. Warm corn and black beans in a small pan or microwave.
  7. Assemble bowls with roasted sweet potatoes, BBQ chicken, corn, black beans, cherry tomatoes, and cheddar cheese.
  8. Sprinkle with green onions and serve warm.
