Description

This bang bang shrimp rice bowl features crispy, spicy, and creamy shrimp served over fluffy rice. It is a fast dinner with bold flavor.


Ingredients

  • 1 1/4 pounds large shrimp peeled and deveined
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha style chili sauce
  • 1 tablespoon fresh lime juice
  • 2 cups cooked jasmine rice
  • 1 cup shredded red cabbage
  • 1 cup sliced cucumber
  • 2 tablespoons sliced green onions


Instructions

  1. Pat shrimp dry and season with salt, black pepper, and garlic powder.
  2. Heat a large skillet over medium-high heat and add olive oil.
  3. Cook shrimp in a single layer for 2 to 3 minutes per side until opaque and lightly golden, reaching an internal temperature of 145°F.
  4. While the shrimp cook, whisk mayonnaise, sweet chili sauce, chili sauce, and lime juice until smooth.
  5. Remove shrimp from heat and toss gently with half of the bang bang sauce.
  6. Divide cooked rice between bowls.
  7. Top rice with sauced shrimp, red cabbage, and cucumber.
  8. Drizzle with remaining sauce and finish with green onions. Serve immediately.
