Description
This bang bang shrimp rice bowl features crispy, spicy, and creamy shrimp served over fluffy rice. It is a fast dinner with bold flavor.
Ingredients
- 1 1/4 pounds large shrimp peeled and deveined
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1/3 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha style chili sauce
- 1 tablespoon fresh lime juice
- 2 cups cooked jasmine rice
- 1 cup shredded red cabbage
- 1 cup sliced cucumber
- 2 tablespoons sliced green onions
Instructions
- Pat shrimp dry and season with salt, black pepper, and garlic powder.
- Heat a large skillet over medium-high heat and add olive oil.
- Cook shrimp in a single layer for 2 to 3 minutes per side until opaque and lightly golden, reaching an internal temperature of 145°F.
- While the shrimp cook, whisk mayonnaise, sweet chili sauce, chili sauce, and lime juice until smooth.
- Remove shrimp from heat and toss gently with half of the bang bang sauce.
- Divide cooked rice between bowls.
- Top rice with sauced shrimp, red cabbage, and cucumber.
- Drizzle with remaining sauce and finish with green onions. Serve immediately.
