Instructions

  1. Marinate the Chicken: Cut chicken into small, bite-sized pieces for sliders. In a large bowl, mix buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add chicken pieces, making sure they’re submerged. Cover and refrigerate 1 hour to overnight.
  2. Make the Bang Bang Sauce: In a bowl, whisk together mayo, sweet chili sauce, sriracha, honey, lime juice, and garlic powder. Adjust seasoning (more sriracha = spicier, more honey = sweeter). Set aside.
  3. Fry the Chicken: In a shallow dish, mix flour and panko. Remove chicken from marinade, let excess drip off, and coat evenly in flour mixture. Heat about 1 inch of oil in a skillet or deep fryer to 350°F (175°C). Fry chicken in batches, 3–4 minutes per side, until golden and cooked through. Drain on paper towels.
  4. Assemble the Sliders: Toast slider buns lightly. Spread Bang Bang sauce on bottom buns. Add fried chicken pieces, lettuce, red onion, and pickles (if using). Garnish with fresh cilantro, then top with bun.
