Description
An easy banana pudding poke cake with creamy layers and fresh bananas. A simple dessert perfect for gatherings and weeknight treats.
Ingredients
- 1 box yellow cake mix
- 1 cup water
- ½ cup vegetable oil
- 3 large eggs
- 1 package instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla flavoring
- 2 ripe bananas, sliced
- 20 vanilla wafer cookies, crushed
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking dish.
- In a large bowl, combine cake mix, water, vegetable oil, and eggs. Mix until smooth. Pour batter into the prepared baking dish.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10 minutes. Use the handle of a wooden spoon to poke holes all over the cake.
- In a separate bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and slightly thickened.
- Pour the pudding mixture evenly over the cake, ensuring it fills the poked holes. Chill the cake in the refrigerator for 30 minutes.
- In a mixing bowl, beat the heavy whipping cream with powdered sugar and vanilla flavoring until soft peaks form.
- Spread the whipped cream evenly over the chilled cake.
- Arrange the sliced bananas over the whipped cream. Sprinkle the crushed vanilla wafer cookies on top.
- Refrigerate for at least 1 hour before slicing and serving.

- Add the banana slices just before serving to keep them fresh and prevent browning.
