A warm banana pudding cobbler with creamy layers and a golden topping, perfect for summer gatherings.
Ingredients
- 3 ripe bananas, sliced
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup heavy cream
- 1 cup whole milk
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/2 cup unsalted butter, melted
- 20 vanilla wafer cookies
Instructions
- Preheat your oven to 350 degrees F. Lightly grease a 9 by 13 inch baking dish.
- In a medium bowl, whisk together the pudding mix, whole milk, and heavy cream until smooth and slightly thickened.
- In the prepared dish, spread the sliced bananas evenly. Sprinkle the granulated sugar and brown sugar over the bananas.
- Pour the pudding mixture over the bananas and spread gently to cover.
- Arrange the vanilla wafer cookies evenly across the top of the pudding layer.
- In another bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the milk and melted butter until a smooth batter forms.
- Pour the batter evenly over the cookie layer without stirring.
- Bake for 40 to 45 minutes, until the top is golden brown and the filling is bubbling around the edges.
- Remove from the oven and let cool for at least 15 minutes to set before serving.
- Serve warm with extra sliced bananas if desired.
