Description

A warm banana pudding cobbler with creamy layers and a golden topping, perfect for summer gatherings.


Ingredients

  • 3 ripe bananas, sliced
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup heavy cream
  • 1 cup whole milk
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted
  • 20 vanilla wafer cookies


Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9 by 13 inch baking dish.
  2. In a medium bowl, whisk together the pudding mix, whole milk, and heavy cream until smooth and slightly thickened.
  3. In the prepared dish, spread the sliced bananas evenly. Sprinkle the granulated sugar and brown sugar over the bananas.
  4. Pour the pudding mixture over the bananas and spread gently to cover.
  5. Arrange the vanilla wafer cookies evenly across the top of the pudding layer.
  6. In another bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the milk and melted butter until a smooth batter forms.
  7. Pour the batter evenly over the cookie layer without stirring.
  8. Bake for 40 to 45 minutes, until the top is golden brown and the filling is bubbling around the edges.
  9. Remove from the oven and let cool for at least 15 minutes to set before serving.
  10. Serve warm with extra sliced bananas if desired.
