Description

Healthy banana oatmeal protein muffins made with ripe bananas, oats, and protein-rich ingredients for a quick breakfast.


Ingredients

  • 2 ripe bananas mashed
  • 2 large eggs
  • 1/3 cup plain Greek yogurt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 3/4 cup oat flour
  • 1/4 cup vanilla protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/3 cup mini dark chocolate chips


Instructions

  1. Preheat oven to 350 degrees F. Line a 12-cup muffin tin with liners or spray with oil.
  2. In a large bowl, whisk mashed bananas, eggs, Greek yogurt, honey, and vanilla extract until smooth.
  3. Add rolled oats, oat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Stir until just combined.
  4. Fold in mini chocolate chips.
  5. Divide batter evenly among muffin cups, filling each three-quarters full.
  6. Bake for 16 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
