Description

Ingredients

  • 2 ripe bananas, mashed
  • 2 cups old fashioned oats
  • 1/3 cup peanut butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup raisins
  • 1/4 cup chopped walnuts


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mash bananas until smooth.
  3. Stir in peanut butter, maple syrup, and vanilla extract until fully combined.
  4. Add oats, cinnamon, baking powder, and salt. Mix until evenly incorporated.
  5. Fold in raisins and chopped walnuts.
  6. Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet and gently flatten slightly.
  7. Bake for 12 to 15 minutes until cookies are set and lightly golden on the edges.
  8. Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
