Ingredients

  • ½ cup butter, softened
  • ¼ cup canola oil
  • 2⅛ cup sugar
  • 2 tsp lemon juice
  • 1½ cup Buttermilk
  • 3 eggs
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 2 tsp baking soda
  • 3 cups all-purpose flour
  • 1½ cups mashed very ripe bananas (about 3-4 bananas)
  • CREAM CHEESE ICING:
  • ½ cup salted butter, softened
  • 1 (8 oz) cream cheese, softened
  • 1 tsp vanilla extract
  • 3 cups powdered sugar


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Grease and flour a bundt pan. Set it aside.
  3. Mash the bananas and mix in the lemon juice. Set aside.
  4. In a large bowl, use a hand mixer or stand mixer to combine the softened butter, oil, and sugar. Mix until smooth.
  5. Add the eggs one at a time, mixing just until combined after each addition.
  6. Stir in the buttermilk and vanilla extract. Mix well. Scrape down the sides and bottom of the bowl to ensure everything is thoroughly mixed.
  7. Add the baking soda and flour. Mix gently until just combined.
  8. Add the mashed bananas to the batter and mix gently again.
  9. Pour the cake batter evenly into the prepared bundt pan. Do not fill the pan more than ⅔ full.
  10. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Immediately after removing the cake from the oven, place the bundt pan into your freezer for 45-60 minutes.
  12. While the cake is freezing, prepare the cream cheese icing. In a medium-sized mixing bowl, combine the softened butter and softened cream cheese. Beat for 2 minutes until smooth.
  13. Add the vanilla extract and mix until blended.
  14. Gradually add the powdered sugar, beating until the icing is smooth. If you are using unsalted butter, add a pinch of salt with the powdered sugar.
  15. Remove the cake from the freezer after 45-60 minutes. Frost the cake with the cream cheese icing.
