Description
Soft and chewy banana bread cookies made with just 6 ingredients. Perfect for using up overripe bananas.
Ingredients
- 1 ripe banana, mashed
- ½ cup granulated sugar
- ¼ cup melted butter
- 1 cup all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- Optional additions: ¼ teaspoon cinnamon, ½ teaspoon vanilla extract, ¼ cup chopped walnuts or mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, mash the banana until smooth. Stir in the sugar and melted butter. Add vanilla extract if using.
- Sift in the flour, baking soda, and salt. Add cinnamon if using.
- Stir just until a dough forms. Do not overmix. Gently fold in chocolate chips or nuts if using.
- Drop spoonfuls of dough onto the prepared baking sheet, about 2 inches apart.
- Bake for 10–12 minutes, until the edges are golden and the tops are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Using overripe bananas will yield the best flavor and texture.
- Be careful not to overmix the dough to keep the cookies tender.
- The cookies will spread slightly, so ensure they are placed with enough space on the baking sheet.
