Ingredients
- 1 large egg
- 1 3 cup 2 percent plain Greek yogurt
- 1 3 cup unsweetened soy milk
- 1 4 cup all purpose flour
- 3 tablespoons vanilla protein powder
- 1 teaspoon granulated sweetener
- 1 2 teaspoon baking powder
- Nonstick cooking spray
- 1 4 cup fresh berries for topping
Instructions
- Preheat the oven to 350°F and lightly coat two small oven-safe bowls with nonstick cooking spray.
- Whisk the egg in a medium bowl until smooth.
- Whisk in the Greek yogurt and soy milk until fully combined and creamy.
- Add the flour, protein powder, granulated sweetener, and baking powder. Stir until a smooth batter forms with no dry pockets.
- Divide the batter evenly between the prepared bowls.
- Sprinkle fresh berries evenly over the tops.
- Place the bowls on a baking sheet and bake for 20 to 22 minutes, until the tops are set and a toothpick inserted near the center comes out mostly clean.
