Ingredients
- 4 medium zucchini (about 1.5 to 2 pounds total)
- 2 tablespoons olive oil
- 0.5 cup freshly grated parmesan cheese
- 0.5 teaspoon dried basil
- 0.5 teaspoon dried oregano
- 0.5 teaspoon dried thyme
- 0.5 teaspoon garlic powder
- 0.5 teaspoon kosher salt
- 0.25 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 400 degrees F and line a large baking sheet with parchment paper.
- Wash the zucchini thoroughly and trim off the ends.
- Slice each zucchini in half lengthwise, then slice each half lengthwise again to create four long spears per zucchini.
- Arrange the zucchini spears in a single layer on the prepared baking sheet, skin-side down.
- In a small mixing bowl, whisk together the grated parmesan cheese, dried basil, dried oregano, dried thyme, garlic powder, kosher salt, and black pepper.
- Brush the cut flesh of each zucchini spear generously with the olive oil.
- Sprinkle the parmesan-herb mixture evenly over the oiled surfaces of the zucchini spears, pressing gently to adhere.
- Bake for 12 to 15 minutes until the zucchini is tender when pierced with a fork.
- Switch the oven to the broiler setting and broil for 2 to 3 minutes, watching closely until the cheese topping is bubbly and golden brown.
- Remove from the oven and let cool for 2 minutes on the baking sheet to firm up the crust.
- Transfer the spears to a serving platter and garnish with fresh parsley.
