Ingredients

  • 1 cup long-grain white rice (rinsed)
  • 2 cups chicken or vegetable broth
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium tomato (diced)
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat vegetable oil in a saucepan over medium heat. Sauté onions until translucent, about 5 minutes.
  3. Add garlic and sauté for 1 minute until fragrant.
  4. Stir in the rinsed rice and toast for 3-4 minutes until slightly golden.
  5. Add diced tomato and tomato sauce. Cook for 2 minutes.
  6. Pour in broth and add salt. Bring to a boil.
  7. Lower heat, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
