Ingredients
- 1 cup long-grain white rice (rinsed)
- 2 cups chicken or vegetable broth
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 medium tomato (diced)
- 1/4 cup tomato sauce
- 1/2 cup frozen peas (optional)
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat vegetable oil in a saucepan over medium heat. Sauté onions until translucent, about 5 minutes.
- Add garlic and sauté for 1 minute until fragrant.
- Stir in the rinsed rice and toast for 3-4 minutes until slightly golden.
- Add diced tomato and tomato sauce. Cook for 2 minutes.
- Pour in broth and add salt. Bring to a boil.
- Lower heat, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
- Fluff rice with a fork. Stir in peas if using. Garnish with cilantro and serve with lime wedges.
