Ingredients

  • 2 tablespoons butter
  • 3 1/2 cups peeled and diced apples
  • 1/2 cup light brown sugar
  • 1 teaspoon cinnamon
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 2 tablespoons light brown sugar (for topping)
  • 1 cup powdered sugar, sifted
  • 2-3 tablespoons milk
  • 1/4 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F. Prepare an 8×8 inch pan by spraying with nonstick cooking spray, lining with parchment paper, and spraying the parchment.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add diced apples, 1/2 cup light brown sugar, and 1 teaspoon cinnamon. Cook for about 8 minutes until apples soften and create a syrup. Remove from heat.
  3. In a large bowl, whisk together 3/4 cup light brown sugar and 1/2 cup melted butter. Add vegetable oil, 1/2 cup milk, 2 teaspoons vanilla extract, and 2 large eggs. Whisk until smooth.
  4. Add 2 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon allspice to the wet ingredients. Whisk until partially combined.
  5. Fold in all but 1/2 cup of the cooked apples and their syrup using a rubber spatula until just combined.
  6. Pour the batter into the prepared pan. Top with the reserved 1/2 cup of apples and juices. Sprinkle the top with 2 tablespoons of light brown sugar.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
  8. While the cake is baking, prepare the glaze by whisking together 1 cup sifted powdered sugar, 2-3 tablespoons milk, and 1/4 teaspoon vanilla extract until smooth. Adjust milk for desired consistency.
  9. Let the cake cool in the pan for 15 minutes. Drizzle the glaze over the warm cake. Slice and serve, preferably slightly warm.
