Description
This Apple Fritter Cake is a delicious and easy dessert perfect for any occasion, especially fall baking. It combines tender, spiced apples with a moist cake base and a sweet glaze.
Ingredients
- 2 tablespoons butter
- 3 1/2 cups peeled and diced apples
- 1/2 cup light brown sugar
- 1 teaspoon cinnamon
- 3/4 cup light brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon allspice
- 2 tablespoons light brown sugar (for topping)
- 1 cup powdered sugar, sifted
- 2-3 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Prepare an 8×8 inch pan by spraying with nonstick cooking spray, lining with parchment paper, and spraying the parchment.
- Melt 2 tablespoons of butter in a skillet over medium heat. Add diced apples, 1/2 cup light brown sugar, and 1 teaspoon cinnamon. Cook for about 8 minutes until apples soften and create a syrup. Remove from heat.
- In a large bowl, whisk together 3/4 cup light brown sugar and 1/2 cup melted butter. Add vegetable oil, 1/2 cup milk, 2 teaspoons vanilla extract, and 2 large eggs. Whisk until smooth.
- Add 2 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon allspice to the wet ingredients. Whisk until partially combined.
- Fold in all but 1/2 cup of the cooked apples and their syrup using a rubber spatula until just combined.
- Pour the batter into the prepared pan. Top with the reserved 1/2 cup of apples and juices. Sprinkle the top with 2 tablespoons of light brown sugar.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
- While the cake is baking, prepare the glaze by whisking together 1 cup sifted powdered sugar, 2-3 tablespoons milk, and 1/4 teaspoon vanilla extract until smooth. Adjust milk for desired consistency.
- Let the cake cool in the pan for 15 minutes. Drizzle the glaze over the warm cake. Slice and serve, preferably slightly warm.
