Description

A delicious grilled cheese sandwich featuring sweet caramelized onions, tart apples, and melted Gouda cheese on toasted sourdough bread.


Ingredients

  • 8 thick slices of sourdough bread
  • 2 yellow onions, thinly sliced
  • 4 Tablespoons butter, divided + extra to butter the bread
  • 1 Tablespoon balsamic vinegar
  • Salt and freshly ground pepper
  • 1-2 teaspoon fresh thyme
  • 2 apples, peeled, cored and sliced
  • 1 pinch nutmeg (optional)
  • 1 teaspoon apple cider vinegar (optional)
  • 2 cups (150g) gouda cheese, shredded


Instructions

  1. Melt 2 Tablespoons of butter in a large skillet over medium-high heat. Add the onions and cook 5-8 minutes, until softened.
  2. Add the balsamic vinegar, and continue cooking another 5 minutes, until the onions are golden and caramelized.
  3. Add the thyme, salt and pepper, and cook another minute. Remove from the heat.
  4. In a separate skillet, melt the 2 remaining Tablespoons of butter. Add the apples, and cook on medium heat until soft.
  5. Add a splash of apple cider vinegar and a pinch of nutmeg if desired.
  6. Butter the outside of each slice of bread.
  7. Layer the ingredients (cheese, onions, apples) on one side of the bread, and finish up with a layer of cheese.
  8. Top with the remaining slice of bread.
  9. Heat butter in a skillet over medium-low heat. Place sandwiches in the pan and toast, carefully flipping when perfectly golden brown and cheese begins to melt.
  10. Cut in half and enjoy.

Notes

  • Gouda cheese is recommended, but feel free to substitute with your favorite melting cheese.
  • The apple cider vinegar and nutmeg are optional but add a nice depth of flavor.
