Ingredients
- Apple Muffins: 1 cup granulated sugar
- ½ cup whole milk
- ½ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- ¼ teaspoon kosher salt
- 2 cups peeled and diced apples
- Crumble Topping: ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
- ¼ cup all purpose flour
- 1½ tablespoons unsalted butter softened
Instructions
- Preheat the oven to 425°F and line 14 muffin cups with paper liners.
- In a large bowl, whisk together the sugar, milk, oil, egg, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and stir just until combined.
- Gently fold in the diced apples until evenly distributed.
- Divide the batter evenly between the muffin cups.
- In a small bowl, combine the sugar, cinnamon, flour, and softened butter for the crumble until crumbly.
- Sprinkle the crumble evenly over the muffin batter.
- Bake for 5 minutes, then reduce the oven temperature to 350°F without opening the door.
- Continue baking for 14 to 16 minutes until a toothpick inserted in the center comes out clean.
- Remove from the oven and cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
