Description
Tender apple cider beef served with creamy mashed sweet potatoes. A cozy sweet savory dinner for fall.
Ingredients
- 1 ½ pounds beef chuck roast cut into chunks
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 cup apple cider
- 1 cup beef broth
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 large sweet potatoes peeled and cubed
- 2 tablespoons butter
- ¼ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Pat the beef dry and season with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Sear the beef chunks until browned on all sides, then remove and set aside.
- In the same pot, add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 30 seconds.
- Pour in apple cider, beef broth, apple cider vinegar, and maple syrup. Stir and scrape any browned bits from the bottom.
- Add thyme and smoked paprika. Return the beef to the pot.
- Cover and simmer on low heat for 1 hour 30 minutes, or until the beef is tender.
- Mix cornstarch and water in a small bowl. Stir into the pot and simmer uncovered for 5 minutes until the sauce thickens.
- While the beef cooks, place sweet potatoes in a pot and cover with water. Bring to a boil and cook for 15 to 20 minutes until fork tender.
- Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
- Serve the apple cider beef over a bed of mashed sweet potatoes with extra sauce spooned on top.

- Cook beef to an internal temperature of 145°F with a 3 minute rest for safe consumption.
