Apple Cider Beef with Mashed Sweet Potatoes

Description

Tender apple cider beef served with creamy mashed sweet potatoes. A cozy sweet savory dinner for fall.


Ingredients

  • 1 ½ pounds beef chuck roast cut into chunks
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 cup apple cider
  • 1 cup beef broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoons butter
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Pat the beef dry and season with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Sear the beef chunks until browned on all sides, then remove and set aside.
  3. In the same pot, add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 30 seconds.
  4. Pour in apple cider, beef broth, apple cider vinegar, and maple syrup. Stir and scrape any browned bits from the bottom.
  5. Add thyme and smoked paprika. Return the beef to the pot.
  6. Cover and simmer on low heat for 1 hour 30 minutes, or until the beef is tender.
  7. Mix cornstarch and water in a small bowl. Stir into the pot and simmer uncovered for 5 minutes until the sauce thickens.
  8. While the beef cooks, place sweet potatoes in a pot and cover with water. Bring to a boil and cook for 15 to 20 minutes until fork tender.
  9. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
  10. Serve the apple cider beef over a bed of mashed sweet potatoes with extra sauce spooned on top.
