Soft cinnamon spiced muffins with rich apple butter swirled throughout for a cozy breakfast treat.
Ingredients
- 1 3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter melted
- 3/4 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup apple butter plus extra for swirling
Instructions
- Preheat your oven to 375°F. Line a 12 cup muffin pan with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, whisk together the melted butter and brown sugar until smooth.
- Add the eggs and vanilla extract and whisk until combined.
- Stir in the milk and 1/2 cup apple butter.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Divide the batter evenly among the muffin cups.
- Spoon a small amount of extra apple butter onto each muffin and swirl gently with a toothpick.
- Bake for 18 to 22 minutes until the tops are golden and a toothpick inserted into the center comes out clean.
- Cool the muffins for 5 minutes in the pan before transferring to a wire rack.
