Description

Soft cinnamon spiced muffins with rich apple butter swirled throughout for a cozy breakfast treat.


Ingredients

  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter melted
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup apple butter plus extra for swirling


Instructions

  1. Preheat your oven to 375°F. Line a 12 cup muffin pan with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, whisk together the melted butter and brown sugar until smooth.
  4. Add the eggs and vanilla extract and whisk until combined.
  5. Stir in the milk and 1/2 cup apple butter.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined.
  7. Divide the batter evenly among the muffin cups.
  8. Spoon a small amount of extra apple butter onto each muffin and swirl gently with a toothpick.
  9. Bake for 18 to 22 minutes until the tops are golden and a toothpick inserted into the center comes out clean.
  10. Cool the muffins for 5 minutes in the pan before transferring to a wire rack.
