Ingredients
- ½ cup brown sugar
- 1 ½ teaspoons ground cinnamon
- 2 large eggs, room temperature
- ½ cup granulated sugar
- ½ cup butter, melted
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 cups chopped apples (Pink Lady, Gala, Honeycrisp – peeled and chopped, about 2 apples)
Instructions
- Preheat oven to 350°F. Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper.
- In a small bowl, whisk together brown sugar and cinnamon.
- In a large mixing bowl, whisk the eggs and granulated sugar together.
- Stir in the melted butter and vanilla extract.
- Add the all-purpose flour, baking powder, baking soda, and salt. Mix until just combined.
- Gently fold in the chopped apples.
- Pour half of the batter into the prepared loaf pan. Sprinkle about three-quarters of the brown sugar mixture over the batter.
- Spread the remaining batter on top. Sprinkle the remaining cinnamon sugar over the top and swirl it into the batter.
- Bake for 35 to 45 minutes, or until a toothpick inserted comes out clean. Tent with foil if browning too quickly.
- Let the bread cool completely before slicing.
