Ingredients
- 3 cups all-purpose flour

- 3 teaspoons vanilla extract
- 2 cups shredded zucchini
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 325°F. Grease and flour two 8×4-inch loaf pans.
- In a large bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon.
- In a separate large bowl, beat the eggs, oil, sugar, and vanilla until combined.
- Add the flour mixture to the wet ingredients and beat well.
- Gently stir in the shredded zucchini and chopped walnuts until just combined.
- Pour the batter evenly into your prepared pans.
- Bake for 40 to 60 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
- Let the loaves cool in the pans for 20 minutes, then turn them out onto a wire rack to cool completely.
