Ingredients
- 6 large Yukon Gold potatoes, peeled and diced into 1-inch cubes
- ¼ cup olive oil
- 1½ teaspoons paprika
- 1¼ teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 450°F. Line a rimmed baking sheet with parchment paper.
- Peel and dice the potatoes into evenly sized cubes and place them in a large mixing bowl.
- In a small bowl, whisk together olive oil, paprika, garlic powder, onion powder, cumin, chili powder, salt, and black pepper.
- Pour the seasoning mixture over the potatoes and toss well to coat every piece.
- Spread the potatoes in a single layer on the prepared baking sheet. Do not crowd them.
- Roast for 35 to 45 minutes. Stir them every 10 minutes until they are golden brown and crisp on the edges.
- Remove from the oven. Taste the potatoes and add a light sprinkle of salt if necessary.
- Serve hot with roasted vegetables, chicken, or fish.
Notes
- For extra crunch, let the potatoes rest for 3 minutes before serving. This allows the exterior to crisp more.
